Redeye I think you have the perfect pan to fry a couple of eggs.


a fridge cleaner involving quinoa, air fried corn tortillas, black beans, cheese, picante, and sour cream
was craving an avocado, but alas




another simple single pan fridge cleaner, this time saffron rice, black beans, egg, salsa picante, tres queso mix, avacado

rice first to develop a crust, add beans, hollow middle with a dollop of butter, drizzled some water around the edges after the egg went in then lidded to help with overall moisture and glaze development
almost didn't survive pan to plate but good enough for tonight

cleaning the fridge, tho. spouse loves the stuff.


Omelets with feta is great, the way it melts. Included some merguez and chorizo sausage I grilled along with grill peppers and onions and salsa.




Posted before that moving to the countryside worked ok for my cheeses.

No supermarkets, but also get this from my local corner shop.

But, there's always a but. It looks like those tortillas could use a few seconds on a hot flat iron pan or griddle.


Looks like there's some puff on those 'tillos. Probably felt some heat. I would expect Red would know to apply heat.

absolutely az, no other corn tort is eatin up in our kitchen without some sort of cast iron plancha time
in fact we leave it always atop the gas stove except for crumby cheese crust removal

also close to optimal time for fully embracing your local avocado and tomato farmers market opportunities


Glad I was wrong. My RED infatuation was on shakey ground there for a moment.
