unless someone is slow playing a flush i think you can overbet turn and just take it down pretty much always. you should still have all the overpairs, theoretically

I don't like overbetting the turn. $50-100 looks big at 1/2. You are representing an overpair, not a flush, so an overbet does not make sense. Plus you could go fairly small on the turn with the option to barrel the river, depending on the action and the river card.
