This is not likely to be in an art history book, unless maybe it's only US art history. It would be in a general US history book, particularly one made for high school (or possibly younger).
I may remember this one better than many of you because I never studied any art so it stop stands out as one of very few paintings I know.
If your class in HS discussed a lady who represented Manifest Destiny, there is virtually no chance this isn't the one.

This woke police chief did everything she could to minimize what happened. Apparently it was important to point out all the other non criminal events that happened that night. Also, she refused to initially name the suspects. Also, The comments were turned off for her video. Also, this wasn't a fight or a brawl it was a brutal mob attack. Notice that only one person called 911. Notice all the cheering on and non helpful individuals. She also seemed proud that it only took 6 minutes to arrive on the scene. It is quite possible the victims put themselves into a bad situation and possibly provoked the attack. However, this doesn't excuse how things went after the violence began.
