Authentic Italians in the south or in some areas of the center use dry. Authentic amatriciana isn't with egg based pasta, nor is gricia, nor is sorrentina, nor is norma.
Authentic spaghetti alle vongole are dry spaghetti.
Authentic tagliatelle al ragù are fresh, tonnarelli and pici are and so on.

Normal lasagna Is without mozzarella and ricotta lol.
Lasagna alla bolognese (the Classic One) is with besciamella (!!!!) and grated parmesan on top.

The part that sucks is everyone's pathological obsession with perfecting it, "oh, this and that spice makes this food 12.7% more delicious (I mean, sure, taste is super subjective, but let's argue forever as though it's not!)"
